Chef Bala started his culinary career in Europe, moving from his homeland of India in 1980. He trained in Germany as a young man absorbing all he could from the expert chefs that he worked alongside. In these fine dining establishments he was exposed to the many different culinary cultures of Europe, with Italian cuisine becoming one of his specialties. Coming to Toronto Canada in 1990, he began working top Italian restaurant, Orso, located in the heart of the downtown core. He then established himself as sous chef at Allen's in 1998, which was owned by John Maxwell, who was also the initial owner of PJ O Brien's at the time. After the Quinns acquired PJ's as their own, chef Bala was promoted to executive chef in 2002. Since then, Chef Bala has been using all his consummate knowledge, talent and expertise in creating an extensive variety of daily house specials as well as an Irish inspired full menu. Chef Bala has been able to consistently maintain a fine dining experience in his tasteful presentations, while being provided in a casual, warm, upscale neighbourhood pub atmosphere. He has won over the hearts and tastebuds of the lucky diners who frequent the pub again and again for these culinary delights.
